Buterkrem
Moj mladi komsija upisao je poslasticarsku skolu i praksu tokom celog skolovanja obavljao u pekarskoj industriji sekuci ratluk i pakujuci pekarske kolace. U skoli su napravili par puta puding i patispanje neke. Za diplomski dobio je temu sa tehnikom pripreme-- torta s jagodama od djenovskog biskvita i klasicnog buterkrema. Napravili smo tortu zajedno, napisali rad , odbranio je rad vrseci od svog materijala demonstraciju u skoli i diplomirao. tetka ga uposlila u nemackoj u poslasticarskoj radnji gde je glavni sef prvog radnog dana hteo da ga posalje kuci , ali su ga sprecile majstorice imajuci u vidu da je vredan , voli taj posao i ima visinu od 185cm i 90kg sto je dobra pocetna pozicija za nekog ko bi radio na kazanu iliti kuvalu i velikom mikseru. Seegrtuje uspeno i zaradjuje svoj hleb...
Djenovski biskvit je obican patispanj koji se muti na pari i pece standardno , poznat u istoriji skoro od pocetka poslasticarstva
Buter krem koji smo tad radili je standardni poslasticarski krem , koji u na engleskom govornom podrucju ima jednostavno ime Italijanski merinik buterkrem iliti Italian Merinikue buttercream, a radi se tako sto se buter sobne temperature malo razbije , belanac se umuti pa mu se dodaje vreli sirup od secera i muti dok se belanac ne upari zakuva kao sto se sprema obican sam za torte , a zatim pomesa sa umucenim buterom....
Recepti su slicni u kolicinama i svi su dobri , vazna je metoda da se sirup od secera dobro ukuva, link za objasnjenje postupka, na engleskom je ali ce se vecina naci...
Tu se otapa belanac na pari , dno suda ne lepiti u vrucu vodu u duplom sudu nego je dno posude bas na pari i belanac se sporo greje i otapa secer i zagrejan se muti i sjedinjuje sa mekim buterom
I na kraju kao najbolji je muslin buterkrem. Rosa levi Beernbaum je pre 20 i vise godina napisala knjigu cake bible , iliti biblija torti i postavaila taj reecept koji skoro pa svi koriste sa raznim dodacima od cokolade ,, voca ,arome ... recept je na engleskom
Neoclassic Buttercream
From The Cake Bible by Rose Levy Beranbaum (William Morrow & Co., 1988)

Yield: 4 cups
Ingredients:
6 large egg yolks
¾ cup sugar
½ cup corn syrup
2 cups unsalted butter, softened
2 to 4 Tablespoons liqueur or eau-de-vie of your choice
Method:
Have ready a greased 1 cup heatproof glass measure near the range.
In a bowl beat the yolks with an electric mixer until light in color. Meanwhile, combine the sugar and corn syrup in a small saucepan (preferably with a nonstick lining) and heat, stirring constantly, until the sugar dissolves and the syrup comes to a rolling boil. (The entire surface will be covered with large bubbles.) Immediately transfer the syrup to the glass measure to stop the cooking.
If using an electric hand-held mixer, beat the syrup into the yolks in a steady stream. Don’t allow syrup to fall on the beaters or they will spin it onto the sides of a bowl. If using a stand mixer, pour a small amount of syrup over the yolks with the mixer turned off. Immediately beat at high speed for 5 seconds. Stop the mixer and add a larger amount of syrup. Beat at high speed for 5 seconds. Continue with the remaining syrup. For the last addition, use a rubber scraper to remove the syrup clinging to the glass measure. Continue beating until completely cool.
Gradually beat in the butter and, if desired, any optional flavoring. Place in an airtight bowl. Bring to room temperature before using. Rebeat to restore texture.
