kvalitet kafe zavisi od mnogo faktora., najvazhnija je vrsta biljke. postoje brojne razlike izmedju, recimo, arabike i robuste. stablo tipichne arabike visoko je od 2 do 5m. vishe je nalik grmu (ovo mi nije bash jasno:) i ima tamnozelene, duguljaste blagovalovite i shiljate listove. arabika je samoplodna biljka, a njene podvrste su tipichna arabika, burbonska, brazilska, arapska moka kafa i mnoge druge. podvrsta "maragogype", stvorena je u brazilu, oko 1870. godine radja velika zrna., posebno je cenjena u nemachkoj; a iz brazila su je uvezle indonezija, indokina, gvineja i nigerija. nasuprot ovoj podvrsti, moka ima izuzetno sitna i visokokvalitetna zrna, a domovina joj je etiopija. pretpostavlja se da se danas u svetu gaji oko 9 milijardi stabala arabike.
robusta je kao samonikla biljka pronadjena u zairu, u dolini reke kongo. ime je dobila po snazhnom robusnom stablu. zreli plod robuste je okrugliji i od ploda arabike, a razliqje se i po boji. zhucjkast je, a ne crvenosmedj. gaji se na javi, u indokini, obali slonovache, ugandi i keniji.
postoji josh nekoliko vrsta kafe, ali na arabiq i robustu pada chak 98% celoqpne svetske proizvodnje. procene su da od toga 70-75% chini proizvodnja arabike, 23-35% robuste, a samo 2-5% otpada na uzgajanje retkih vrsta poput liberike, ekselse ili stenofilije.
 
prochitala sam dve razlichite informacije:

1. da je za 2 sholjice kafe potrebno zrnevlje sa chak 12 zhbunova!
2. da je za 1 sholjicu kafe potrebno zrnevlje sa 2 zhbuna.....

valjda to zavisi od potroshacha..... neko voli jachu, neko slabiju..... :roll: :-D
 
kafene kockice leda:
logichno, u obichan shablon za led sipate slabiju kafu i zamrznete.

flavored whipped cream:
ingredients:
1 cup (1/2 pint) whipped cream,
2-3 tbs. confectioners sugar (or to taste),
2 tbs. liqueur (grand marnier, kahlua, frangelico, amaretto, etc.) or 2 tbs. instant coffee or cocoa or 1 tsp. vanilla,
almond,
rum or brandy extract
directions:
combine ingredients in mixing bowl. using electric mixer whip ingredients until soft peaks form. put a dollop of cream in a cup of coffee or serve with compatible desserts. yield: 2 cups.

 
evening irish cream:
ingredients:
2 egg yolks, beaten,
1 pint half n half,
1 (14 ounce) can sweetened condensed milk,
1 1/2 cups whiskey or brandy,
1 1/2 tsp. chocolate syrup,
1/4 tsp. coconut extract,
hot brewed coffee
directions:
combine all ingredients and whisk until well blended. store in refrigerator. serve in hot coffee like cream or in liqueur glasses as an elegant liqueur. yield: 6 cups or 16 (3 ounce) servings.

 
coffee cordial:
ingredients:
1 cup sugar,
1 1/2 cup brown sugar,
2 1/4 cups double-strength coffee,
12 ounces vodka,
3 tbs. vanilla extract
directions:
combine sugar, brown sugar and coffee in saucepan. bring to a boil and simmer for 5 min. remove from heat. when cool put into 1 quart glass container. mix in vodka and vanilla. cover securely and store at room temperature for 2 weeks. yield: 1 quart.

 
quick kahlua:
ingredients:
2 1/2 cups very strong coffee,
2 3/4 cups sugar,
2 tsp. real vanilla,
1 fifth vodka,
3 tbs. glycerin (available at pharmacy)
directions:
in a large saucepan, boil the 2 cups coffee and the sugar for 3 to 4 min. add remaining ingredients to coffee syrup, stirring to mix. let cool and store in dark bottles. may be used immediately. yield: 2 fifths.

 
no-wilt whipped cream:
ingredients:
1/2 tsp. unflavored gelatin,
1 tbs. cold water or coffee,
1 cup heavy cream,
2 tsp. sugar (optional),
1.2 tsp. vanilla (optional)
directions:
place gelatin in small saucepan and pour cold water or coffee over it. let it stand 1 min to soften. dissolve gelatin over medium heat. place cream, sugar and vanilla in a chilled bowl and beat with electric mixer. gradually add gelatin mixture; continue to beat until cream holds shape. yield: 2 cups.
 
coffee brandy:
ingredients:
1 whole vanilla bean,
2 cups triple-strength, freshly brewed coffee,
4 cups sugar,
1 1/2 pints brandy
directions:
split vanilla bean half way down middle. mix other ingredients, add bean and let brew in close jar in dark place for 1 month. remove bean. yield: 9 cups.

kahlua:
ingredients:
4 cups sugar,
4 cups (1 quart) triple-strength, freshly brewed coffee,
2 tbs. vanilla extract,
2 tbs. chocolate syrup,
1 l vodka,
1 gallon glass container with tight lid.
directions:
boil sugar and coffee for 10 min. when cool, add vanilla and chocolate syrup. stir well. add vodka and pour into gallon container, shake every other day for 14 to 16 weeks. flavor improves with age. yield: 1 gallon.

 
fireside coffee:
ingredients:
2 cups cocoa mix,
2 cups instant non-dairy creamer,
1 cup instant coffee granules,
1 1/2 cups powdered sugar,
3/4 tsp. cinnamon,
3/4 tsp. nutmeg
directions:
using a large container with a lid, mix all ingredients. stir well. to serve, place 3 to 4 tsp. of the mixture in a mug and fill with hot water. yield: 6 1/2 cups.
 
irish coffee mix:
ingredients:
1 package butter mints,
2 cups chocolate malted milk mix,
1/2 cup nestle's quick,
6 ounces non-dairy creamer,
4 ounces instant coffee granules
directions:
in a food processor or blender, blend mints and malted milk mix until very fine. mix this and other ingredients in a storage container with a tight cover. store. to serve, add 3-4 tbs. of mix to 1 cup hot water, stirring well. for an extra zing, add irish whiskey, amaretto, cognac, etc. also may be topped with ice cream or whipped cream. yield: 4-5 cups mix.

Café Brulot

Kafa kakvu Francuzi najvise vole.
Skuvati 400ml kafe.Pomesati sa 150 ml konjaka,6 karanfilica i sitno seckanu koru od pola pomorandze.
Celu smesnu zagrejati,ali ne dozvoliti da prokljuca.

Moka kafa

320 ml vrelog mleka podeliti u 4 case.U to umesati 320 ml kakaa.Pripremiti 320 ml espresa i pazljivo sipati u smesu.Po zelji zasladiti secerom ili medom?!

Moka mus

200g cokolade
1 kasika nes kafe u granulama
1 kasika brendija
1 kasika tople vode
4 jajeta
100 g secera u prahu
300 ml ulupane slatke pavlake

Rastopiti cokoladu i ostaviti da se malo prohladi.Umutiti zumanca sa secerom i dodati im smesu brendija,vode i kafe koja se rastopila.
To sve sjediniti sa mlakom cokoladom pa u to dodati umucenu pavlaku i sneg od 4 belanca.Sve lagano izmesati.Mus rasporediti u posude za sluzenje i ukrasiti.

Kakao napitak sa kafom

2 dl vode
10g kakaa
15 g secera
0,5 dl jake crne kafe

Izmesati kakao i secer sa 1 kasiciom vode.Umesati ga u kljucalu vodu i prokuvati.Skloniti sa vatre i dodati crnu kafu.Posebno servirati umucenu slatku pavlaku ili slag.

I jos jedan recept

Za 4 case od po 120 ml

Potrebno je cvrsto ulupati 80 ml slatke pavlake sa 2 kasicice vanilin secera.
U casu staviti po cokoladu pralinu i casu likera i 4 topla espresa sa slagom.
 
coffee sauce

ingredients: 1/2 cup sugar, 3/4 cup hot strong coffee, 1 tbs cornstarch, 2 tbs. water, 1 tbs. butter, dash of salt, 1/2 tsp. walnut flavoring, 1/4 cup chopped walnuts.

directions: place sugar in a small, heavy frying pan and melt slowly over low heat until it turns a light amber. add coffee; stir until blended. dissolve cornstarch in water; stir into sugar-coffee mixture and cook until thickened. add butter, salt, walnut flavoring, and chopped walnuts. makes 1 cup.

sauce licor de cafe

ingredients: 1 cup sugar, 1 cup very strong coffee, 1/8 tsp cinnamon, 1/8 tsp ground cloves, 1/8 tsp ground nutmeg, 1/4 cup licor de cafe (kahlua, tia maria or other coffee liqueur)
directions: combine all ingredients except liqueur. stir until dissolved. slowly bring to a boil n cook for 5 min. skim off any foam that rises to the surface. ql. when cold, stir in liqueur. serve over coffee ice cream, garnished with slivered almonds. yield: 2 cups.

 
hot mocha sauce

ingredients: 3 tbs unsalted butter, 3 ounces unsweetened chocolate, 1/2 cup strong coffee, 1/4 cup light corn syrup, 1 cup sugar, pinch of salt, 1 tsp vanilla
directions: in a saucepan, melt the butter n chocolate. stir in the coffee, corn syrup, sugar n salt. bring the mixture to a boil. boil the sauce gently, without stirring, until thick n smooth, about 10 min. stir in the vanilla. serve hot. yield: 1 cup
